It's been one of those delicious rainy weeks where tea and woolly jumpers rule and muffins are born out of necessity from ingredients you definitely did not leave the house to buy. The kind of week when simple, comforting flavours are in order.
A tempting reason to get out of your comfy chair, these muffins require only 20 minutes of your time, those bananas that have been lurking in the fruit bowl a few days too many, that half nibbled block of chocolate hiding on top of the fridge and a few pantry staples. If you start now your spot might even still be warm by the time you take them out of the oven.
Banana + Chocolate Chunk Olive Oil Muffins
(Makes 6 muffins)
Mix together flax and water, and set aside for a couple of minutes to make your flax egg.
Vigorously whisk together banana, sugar, flax egg, olive oil and vanilla then fold through flour, salt and chocolate.
Bake in a lined and greased muffin tray for 10-15 mins at 180°C.
Allow to cool slightly then serve with tea.
2 medium bananas, mashed
½ cup dark brown muscovado sugar
1 tbs ground flax + 3 tbs water
¼ cup olive oil
Splash of vanilla
1 cup self raising flour
Pinch of course salt flakes
50g dark chocolate, roughly chopped
