I've been following (stalking) Bianca Virtue on Instagram for ages so when I found out that she was hosting a food themed parcel swap it took about 0.36454537 seconds flat to jump on that bandwagon. What Folk Eat is the name of the game and the rules are simple. You get sent the name and address of someone who you send your parcel too à la Kris Kringle. But in April. Then you wait at the door for your parcel to arrive, again from mr or mrs unknown and the rest is superfuntimes.
For my parcel I got paired with Sally from Simmer And Boyle and decided to make up a little cookie kit. I will admit that more than once have I picked up a Donna Hay cookie mix to keep in the cupboard for those times that I need cookies stat and just can't be bothered. Don't judge. They're the best. But this is to redeem myself.

Chocolate Chunk Cookie Kit
30g Caster Sugar
90g Brown Sugar
100g Vanilla Pudding Mix
150g (1 cup) Plain Flour
1/2 tsp Baking Soda
Pinch of Sea Salt
100g Chocolate Bar
Combine sugars and pudding mix, mix well and seal in a cello bag.
Combine flour, baking soda and salt, mix well and seal in a cello bag.
You can chop the chocolate or just keep a bar in your kit. I prefer the latter.
You will need 1 Egg and 125g Butter
Preheat oven to 180°C and roughly chop chocolate,
Beat butter with sugar mix until very light and creamy.
Add egg and mix well. Start adding flour mix one spoonful at a time until all incorporated. Take your time.
Roll into small (or large) balls and bake for 12-15 mins until golden.
Top Tip: You can freeze your dough once they're in balls and just thaw slightly and bake as needed.
