Back in Popsicle Week, I had a moment of panic about my pre-purchased popsicles and made these as back-up but never got around to photographing them and ended up going with my original idea. I had actually since completely forgotten about them chilling in the freezer (see what I did there?) until a couple of days ago when I raided the kitchen for a treat. And man, were they good. They, in all honesty, taste like the movies.
Can someone please have an outdoor movie night - you know, with a sheet as the screen, a projector, string lights and blankets and pillows on the grass - and make these? And invite me? Thanks.
Salted Butter Popcorncicles
- 40g Butter
- 3 tbs Sugar
- 1 1/4 cups Milk
- 3/4 cup Cream
- 1 1/2 cups Popped Popcorn
- A generous sprinkle of Salt Flakes
Into a saucepan, over medium heat, put butter, salt and popcorn. When the butter has melted, add rest of the ingredients and wait for it to come to a simmer. Simmer for a minute, then take off the heat and transfer to a bowl. When the mixture has cooled down, cover the bowl with cling film then refrigerate for at least 4 hours (overnight is best).
Strain through a fine sieve (the butter will have hardened on the surface) then pour into popsicle moulds. Freeze until hard. To garnish before serving, brush with hot water to melt the surface slightly, then cover with popcorn bits.
Yield: 6 Popsicles
