Are there any better words in the English language than no-bake? I think not. And this has been a no-bake kinda week, over here at least. This little loaf is a good base for whatever you are in the mood for. Feeling minty? Add some peppermint crisp! Or some marshmallows, honeycomb or even some fresh berries. Go on then.
Have a good weekend pals!
- 100g Dark Chocolate
- 5og Butter
- 100g Shortbread biscuits
- Splash of Coffee Liqueur (I used Tia Maria)
- 1/4 cup Hazelnuts, chopped
Over low heat in a bain marie, melt chocolate and butter. While you are doing this, chop the biscuits roughly and put in a bowl. Splash over a bit of liqueur then set aside. When chocolate and butter has melted and is smooth, mix in biscuits and hazelnuts then pour into a lined mini loaf tin. Chill for about an hour until firm then dust with cacoa before serving.
