You know what takes a lot of patience? Fortune Cookie folding is what. Trust me, you do not want to attempt these cookies without having a large chunk of time free and being 100% in the zone. It's a little bit of a wax on, wax off exercise I'm afraid. In a good way of course.
I made these cookies for the Sweet Adventures Blog Hop hosted this month by the lovely Love Swah. She set the challenge to create a dessert with a surprise on the inside. I thought about making a homemade Kinder Surprise but it looked kinda hard and I have always wanted to make my own fortune cookies. And what's better than a fortune cookie stuffed with a (dumb) fortune? A fortune cookie stuffed with mini MnMs!
Adapted from Martha's recipe.
- 75g Butter, melted
- 4 Egg Whites
- 1 cup Caster Sugar
- 1 cup Plain Flour, sifted
- Pinch of Salt
- 1 tsp Vanilla Essence
- 1 tbsp Sour Cream (You can substitute thickened cream)
- Packet of mini MnM's
Preheat oven to 175 degrees C. Keep baking tray in the oven while it is heating up as it is easier to spread batter thinly in a circle on a hot tray.
Combine egg whites and sugar and beat with an electric mixer for about a minute on medium speed. Add flour and salt and mix until combined. Add butter, vanilla and sour cream and mix again until combined.
Take out your hot baking tray and carefully line with greaseproof paper. Spoon 2 dollops of batter just bigger than a marble and spread thinly and evenly into a circle. Your circle should be about 10cm in diameter. Bake, 2 at a time, for 4-5 minutes until the sides start to go golden.
Take out and leave for a few seconds then carefully take off the paper with an offset spatula. Working very fast, put some mini MnMs in 2 little heaps on the left and right sides then fold cookie in half. Pinch the edges together then push your finger up in the middle and bring the sides towards the centre to make a fortune cookie shape. (If this doesn't make sense, have a look at this)
To speed up the process, I got 2 cookies ready on baking paper to put in as soon as the others were done. As soon as the cookies have cooled and crisped up transfer them to an airtight container so that they don't take on any moisture and go soft.
Yield: 50 cookies
