Hey, do you have a certain time of day that you need a cookie/curly wurly/tub of nutella/wheel of brie and so help me I will crush you if I don't get it soon?
Obviously I have a major sweet tooth but I can honestly go the entire day without any snacks or sweets HOWEVER when it comes to after dinner time I will not be satisfied until something sweet (read: chocolate) has passed over my lips. And you better stay outta my way til I get it. Like a bear with a sore tooth let me tell you.
So how do I keep this svelte (shut up I can be svelte!) figure of mine with all this midnight snacking? Brownies! Specifically these dark chocolate, raw, vegan stars of all kinds of goodness. They will satisfy any chocolate or dessert craving and you will never ever (ever ever) guess that they're not naughty. Not a word of a lie.
- 2/3 cups Almond Meal
- 1/4 cup Hazelnuts
- 3 tbs Cocoa
- Pinch of Salt
- 1 tbs Agave
- 2 tsp Coconut Butter, measured melted
- 10 Pitted Dates
- 1/4 cup Dried Cranberries
- 1 tsp Vanilla Essence
- 2-3 tbs Water
In a food processor, whizz almond meal, hazelnuts, cocoa and salt until superfine. Add all other ingredients except water and process until it resembles wet sand. Add water 1 tablespoon at a time while whizzing until it comes together like a dough. If it's too moist, refrigerate for about 30 mins then roll out to 1 - 2 cm thickness. Cut with a cookie cutter into shapes of your choosing or you can roll into bite-size balls. Eat. Give. Change a life.
(Apparently these will last a month frozen however I like to keep them out of the fridge in which case they'll last about 4 days.)
