Today was a bad day. A day I did many of my favourite things but it was ruined by an app. An app called Vine. I hate it. But I love it. Either way, here's what went down.
This lovely rainy day started with breakfast. I love breakfast. Then off to Ikea. I LOVE IKEA! So much so, I decided to make a little video on Vine to show the things I saw, want, and bought. Sadly I had run out of data on my phone earlier in the week (also Vine related) and decided to turn it off on my phone. I wasn't happy to wait until we got home to upload my cute little video so hotspotted from the husband's phone and pressed upload. This is where the phone conked out and I was left with nothing to show for my Spielberg efforts.
Pretty sad but not defeated, I decided I'd just do a cute little stop motion when we got home to show off the loot (and there was some great loot). 5 times I filmed this and 4 times I was left with blackness. No video, just blackness. The one time it wasn't black, it was heavily pixelated because the rain had interfered with the filming and me being a perfectionist decided to redo it. Stupid stupid move!
Somehow STILL not defeated, but understandably in need of a cocktail, I made Vanilla Colada Popsicles and filmed it. Once again blackness. Then defeat and break down. Full on tears, snot and rocking. Yes, I went into the ugly cry over an app. So I deleted it right? Nope, I can't. It's instagram for videos! There is SO much potential there! (And somehow this amazing blogger is following me). So, for the love of double stuff oreos and all things chocolate covered, can SOMEONE please get it debugged. And can those posicles freeze already!
Wait, how rude of me, I didn't even offer you a coconut macaroon! That's why you're here. Have 2 - they're delightful. And we should totally Vine ourselves eating them.
- 2 cups Shredded Coconut
- 2 Egg Whites
- 1/3 cup Sugar
- Dash of Vanilla Essence
- 1/3 cup Natural Yoghurt
- 1/3 cup White Chocolate
- Pulp of 1/2 a Passionfruit
Preheat oven to 170 degrees Celsius. With an electric mixer, whisk eggs until soft peaks form then add sugar slowly (1 spoonful at a time). Add the vanilla essence and whisk for another couple of minutes until the mixture is shiny and stiff. Fold in coconut. Spoon little dollops on a greased baking tray and bake for about 20 mins or until golden.
To make the yoghurt ganache: In a small saucepan heat yoghurt until warm enough for your chocolate to melt in (do not overheat yoghurt as it may split) Stir chocolate in until smooth. Cool slightly and mix through passionfruit. Put in the fridge until set then spread generously on macaroons.
