Soooo I went and put beetroot in my froyo, yo. And don't flip out but I kinda liked it. I adore beetroot in any form and came up with these beauties (seriously how beautiful are they??) over a beetroot juice the other day. I mean, gorgeous pink pops that are healthy enough to eat for breakfast? I'll take 3 thanks. (And by 3 I mean 6 thanks).
Beetroot Froyo Pops
- 2 medium Beets
- 1/2 a small thumb sized chunk of fresh Ginger
- 2 cups of Natural Yoghurt
- Honey, to taste
Peel and cut beetroot into small cubes and place into a saucepan with ginger. Cover with water and boil until soft. Let cool, then puree beetroot in a blender or food processor. If you want it really smooth pass through a fine sieve. Mix with yoghurt and add honey to taste. Pour into small plastic shot glasses and place a popsicle stick into the middle (they should stand up fine). Freeze until solid.
