I'm all for granola and green smoothies in the morning but sometimes you just gotta let go and make yourself a huge stack of chocolate pancakes and cover them in espresso cream. Because you're worth it.
I know it's only Thursday but I'm already dreaming of the long weekend. I am feeling exhausted and really looking forward to just taking things a little bit slow for a couple of days. Do you have anything planned? Other than pancakes of course?
Chocolate Pancakes with Espresso Cream
- 2/3 cups Plain Flour
- 1/2 cup Cacoa Powder
- 1 tsp Baking Powder
- 1/4 cup Sugar
- a pinch of Salt
- 1/2 cup Natural Yoghurt
- 1/4 cup Milk
- 2 Eggs
- 1 tsp Vanilla Extract
- 1/4 cup Cacoa Nibs
- 1/2 cup Thickened Cream
- 1 tbs Brown Sugar
- 1 tsp Instant Coffee Granules
For the pancakes, combine dry ingredients making a well in the middle. Add wet ingredients and mix well then fold through cacoa nibs. Cook in a greased fry pan over low heat for a couple of minutes each side.
To make espresso cream, stir all ingredients together in a saucepan over low heat until sugar and coffee granules are dissolved. Take off heat and give a quick whisk until thick. Pour liberally over pancakes.
